Ingredients

  • 4 packs of instant noodles (like Maggi)

  • 8 eggs

  • 2 onions, finely chopped

  • 2 tomatoes, finely chopped

  • 2 green chilies, finely chopped

  • 1 tablespoon ginger-garlic paste

  • 1 teaspoon red chili powder

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon garam masala

  • 1 teaspoon ground coriander

  • 1/2 teaspoon cumin seeds

  • 1 tablespoon oil

  • Salt to taste

  • Fresh coriander leaves for garnish

Directions

  • Preparation:
  • Boiling Eggs:
  • Place the eggs in a saucepan and cover them with water.
  • Bring the water to a boil over medium-high heat.
  • Once boiling, reduce the heat to low and let the eggs simmer for 10-12 minutes.
  • Remove the eggs from the water and let them cool. Peel and set aside.
  • Cooking:
  • Cooking Instant Noodles:
  • In a large pot, bring water to a boil and cook the instant noodles according to the package instructions.
  • Drain the noodles and set aside.
  • Preparing Egg Maggie Masala:
  • Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  • Add chopped onions and sauté until golden brown.
  • Add ginger-garlic paste and green chilies. Sauté for a minute.
  • Add chopped tomatoes and cook until they turn soft and mushy.
  • Stir in red chili powder, turmeric powder, garam masala, and ground coriander. Mix well.
  • Add the boiled eggs and gently stir to coat them with the masala.
  • Add the cooked instant noodles to the pan and mix until well combined.
  • Cook for another 2-3 minutes, allowing the flavors to blend.
  • Serving:
  • Garnish with fresh coriander leaves.
